Here in Sweden, it’s the season for pak choi.

Roasted sesame salmon with pak choi.

This vegetable is known by various names like bok choy, pak choi or pok choi. It is a Chinese cabbage, used as food. It has a flavour between spinach and water chestnuts but is slightly sweeter, with a mildly peppery undertone. The green leaves have a stronger flavour than the white bulb.

Some years back I tried a similar recipe to the one below but instead of preparing this dish completely in the oven I prepared it in two separate pans on the stove together with wild rice. 

The following recipe is a little easier and also quicker to prepare and cook.

Ingredients roasted sesame salmon (4 servings)

2 tbsp soy sauce
6 cm piece fresh ginger, half grated, half finely sliced
2 tsp sesame oil
1 tbsp olive oil
Juice of 1 lime
4 salmon fillets, skin on (I used salmon fillets without skin)
4 pak choi, leaves separated
Bunch spring onions, cut into 3 cm lengths
2 tbsp sesame seeds, toasted (I did not use toasted sesame seeds, but doing so will add a depth of flavour to this dish)
1 red chilli, deseeded and sliced into thing rounds (I used chilli flakes instead. Got a little carried away and wow was it spicy)

Wild rice
Rice
Noodles
Spaghetti

Preparation

  • Mix together the soy sauce, grated ginger, oils, lime juice and some black pepper. Add the salmon and turn to coat. Set aside for 10 minutes.
  • Preheat the oven to 180°c/fan160°c/gas 4. Place the pak choi and spring onions in a large roasting tray. Scatter with the sliced ginger, and top with the salmon and marinade. Sprinkle the salmon with the sesame seeds and scatter with the chilli.
  • Roast in the oven for 8-10 minutes until the salmon is golden brown. Divide among 4 plates and serve with steamed basmati rice.

Tips for your roasted sesame salmon

You can use any firm fish such as cod, haddock, pollock or sea bass – just make sure it’s sustainable.
