Spicy mince in lettuce leaves with rice and chilli mayo

Fresh, tasty, and full of flavour this taco dinner is really easy to prepare. This spicy mince in lettuce leaves with rice and chilli mayo may not look a lot but believe me this meal truly satisfies. I guarantee that it will get your taste buds dancing. I love tacos and this different variation did not disappoint. Next time though, I think for my personal preference, I am either going to keep the seeds in the chilli when I chop them or use a spicier sort of chilli. I like it spicy.

Ingredients Spicy mince in lettuce (4 portions)

2 dl Jasmin rice
4 cloves of garlic
1 – 2 red peppers (chilli)
500 g chicken mince
2 tbsp. oil
3 tbsp. Asian fish sauce
1 tbsp. finely grated lime zest
3 tbsp. freshly pressed lime juice
4 finely chopped spring onions
2 hearts of Romaine lettuce or 1 small iceberg lettuce (for 4 servings)
1/2 dl chopped cashews or peanuts
1 tbsp. coarsely chopped fresh coriander leaves

Side to your spicy mince

Chilli mayonnaise
Lime wedges

Preparation

  • Cook the rice according to the instructions on the packet. Peel and chop the garlic. Divide, remove seeds and finely chop the chilli.
  • Fry the mince, garlic and chilli in oil over a medium heat for about 5 minutes until coloured and the mince is cooked through. Add the fish sauce, lime zest and juice and spring onions.
    Set timer: 5 minutes
  • Pick the lettuce leaves. Divide the mince and rice among the lettuce leaves and top with nuts and coriander
  • Side: Serve with chilli mayonnaise och lime wedges

Tips for your Spicy mince in lettuce leaves

Why not swap out the chicken mince and try this taco dinner with minced pork or vegan mince. Whichever you may choose to use you will definitely enjoy your taco dinner.
